Cryo-vac shrooms

Hey guys, just had a thought.

When my friends and I go hunting (shooting) when we've butchered and done everything to the meat we then use a cryo-vac machine. This machine basically sucks the air out of these special plastic bags and heat seals them. I was wondering with fresh shrooms if you could do this? We've thought about using this for storage of dried shrooms and possibly even spore prints but have not been keen to lose a large portion of the spores when the vacuum is extracting all the air from the bag.

So my question is would fresh shrooms be stored in these air-free, air-tight plastic bags over a few month period? Cheers

A cryovac machine works by lowering the air pressure in the chamber and then seals the bag. When the air is released from the chamber the pressure in the bag is lower than normal air pressure, thus it creates a vacuum in the bag. Foods such as cheese will still have bacterial growth form within the bags in the absence of any air and will still mold. If your shrooms are cracker dry it is a great method to preserve them, we cryovav dried spices this way and they last for years, keep them away from direct light.

Fodo is right. I also wouldn't use it on meat unless u refrigerate after.

Yes mate, we freeze it, to kill any bacteria etc. Just wondered if possible with live specimens

Why do you want to do it with live specimens? The best way to keep live specimens fresh is to keep them alive, they're still alive when you pull them off the substrate after all. Put them in the fridge to slow their growth and put them in some kind of container that can breath that will keep the humidity up. Vacuum sealing them will make them rot.

Yessir, was my intention. I should've been clearer in my post, sounds like it's not going to work. May give it a go one day and see what happens in a few different circumstances

In eastern Europe I have heard of pickled mushrooms, I suppose you could pickle them to taste.

Dry mushrooms are pretty gross. I think a dry p ortabella would be gross haha. Cubes are actually pretty tasty fresh, so I get it

Assuming you're vacuum sealing and not freeze drying this will not work. Bacteria is still present on the specimen and will continue to multiply. You will have vacuum sealed soup before long if the specimen isn't dry.

Freeze drying may be a different story but I highly doubt you own such a device.

You can store them in the refrigerator for a couple of weeks or so if you put them in a container that will keep them humid yet allow fresh air exchange. A paper bag, a small bucket with holes in the lid, a box with holes in the lid, etc. You can also make chocolates which will last much longer and are much more yummy, though you need to dry the mushrooms for that.
