started sterilizing but had to stop

I started steaming my BRF cakes, but due to timing I had to stop sterilizing about 5-10 minutes after I started, should I dump these cakes or are they ok?

I should've been more clear, is it ok if I sterilize them within a couple days before I use them or should I just not use them at all?

just finnish and toss em in the fridge till 1 day before you need them. This ain't rocket surgery!

"rocket surgery". I didn't know rockets require surgery. I know rockets require scientists though.
OP, You will be fine as long as you plan on sterilizing those mediums within the next few days. Sometime I am constrained by the happenings of life and have to shutdown the sterilization-cycle right in the middle of cycle to deal with an issue or something.
When that happens I just reschedule a sterilization run the next morning. If you are super worried, you can give the mediums 30 extra minutes in the sterilizer as a precaution to safety measures.

work on your timing - you need about 4hrs to fully set up, sterelise, and then clean up.
finish sterilising ASAP. if you wait more than a day or two all sorts of contams will blossom in the jars and may or may not be eradicated by the full sterilizsation.
as mentioned, once sterilized the jars can be stored until use for days or weeks.

No. That is not good practice either.
Waiting to inoculate freshly sterilized media gives the micro-beasties that were just knocked back by the sterilization cycle a chance to recover ruining the head start for your mushroom culture that was generated by sterilizing the media in the first place.
Also, the moisture content of your sterile substrate becomes threatened the longer you wait to inoculate said mediums after sterilization.

different meaning when it comes to our hobby"sterilization" is not taken to seriously all we get is a window long enough to colonize the substrate

On multiple occasions when I first began this hobby, I would leave a sterilized grain jar from a batch as that, sterile and have never seen or smelled a contam. I have done this in the past to ensure I was cooking my grain properly. So if I ended up with a contam, I knew it was from inoculation. But seeing how OP is merely steaming with no pressure, I guess it wouldn't be sterile.

From my reading of this hobby and learning terms like pasteurization and sterilization, it is of my understanding that when referring to a window of opportunity one is referencing the use of pasteurization. Perhaps we just use the wrong term?

naw what we would consider "sterilized" isn't sterilized by dictionary definitions but good enough for our use, to truly sterilize grains it would probably take 12 hours or something like that in the pc which by then the grain would be mush.
