Do you think I could preserve fresh/wet mushrooms in a mason jar after pumping all of the air out of the jar, or would they rot?

they should last a week or two in the fridge. i wouldn't seal them into a container for any longer unless dry

Why not just dry them if you plan on storing them?

Alternatively make a tea and store that in the freezer.

I've never considered frozen tea for storage that's not a bad idea I've always just thrown mine in the dehydrator.

Out of curiosity, why not?
Lemon juice stores in the fridge for months, adding it to the tea and then putting it into the freezer?

Ascorbic acid from real lemon juice is an antioxidant (vitamin C). Its a preservative. Why not put it in the frozen mix?

The first mushroom I picked was huge, I don't think I can dry it using only a fan. The oven method seems risky, and I can't afford a dehydrator.

wet mushrooms oxidize the chemicals. oxidation reactions everyone thinks it's air. no oxidation is just a kind of reaction. when they're bone dry they'll stay potent. pony up and buy a 20-30$ dehydrator or use the oven or eat them within a few days.

I dry big mushrooms by slicing them down the center of the stem and placing them over a fan. it will get them to the ambient room humidity and I've gotten them cracker dry before using this method.
i have read that lemon juice can convert psilocybin into psilocin, and the latter is much less stable.
