You should be able to let it grow as long as their is visible mycelium growth. It is probably too late to flip the cake since you may have pinheads forming. Im not an expert thought so if anyone knows diffrently please correct me.

In any event, you should be fine. I've seen cakes pin on the bottom, travel the length of the cake "undergroud" and pop their heads up next to the cake, then proceed to mature normally.
