There has been a lot of talk over the past few years here about heat during drying. I would tell you, with side by side comparisons in memory, that the heat of a food dehydrator for the few hours you need to get your fruits cracker-dry is not going to lower potency. In fact, by doing the job so quickly, you can get them out of harm's way (e.g. the biggest problem, exposure to oxygen) and into sealed bags ASAP.

Use the food dehydrator. I would never get rid of mine. And, for added automation, you can buy a lighting/appliance timer. After a few runs, you'll know you can set X amount of caps in there and set the timer for Y hours later, and come back with trays of perfect fruits.
