How long can I keep wedges/plates in the fridge?

So in a trade I got:
Plates:
oyster shiitake
Wedges:
enokitake reishi oyster
I got 8 different samples in all, and there is no way I can get them all going immediately. How long can these stay dormant in the fridge?

I've successfully fruited cultures from plates that have been stored in the refrigerator for 6 months. If you can get some test tubes it would be best to slant your cultures for long term storage. You will probably want to at least transfer the wedges to plates before storing them. It helps to pour your agar a little thick if you're going to be storing the plates in the fridge for awhile to help keep them from drying out. Put whatever you want to store in a small insulated lunchbox to help with temp swings, condensation & drying out.
Best luck

A thicker agar is just adding more agar flakes (or powder, whatever) to the mix, right? Less nutrients overall so the mycelium eats slower?

That can help too but what I meant was literally pour more agar in the plate

Why are slants the preferred long term, over plates? Is it more than the drying out issue?

Yes a slant holds the moisture better but the ability to have a strip of wood also helps. Thr myc will colonize the wood and will survive in it longer than it can in the agar. Its an ace in the hole for really long term storage
