Never tried it with chops only pork butt but any dry rub with sricha oranges and pineapple juice. Pretty damn tasty to me.

Try a dry rub if you haven't before. Start with brown sugar, chili powder, salt, pepper, garlic powder, cumin, cinnamon in descending portions. The sugar caramelizes and locks in all the good juices in the pork chop..

forget marinating, try brining. Makes for juicier pork chop and more evenly seasoned. Many recipes on the net.

Now that is why I got on here and asked for suggestions, everyone of those sounds fantastic! I look online and recipe after recipe does not sound any better than what I already do. I think I will brine them. I just brined a bunch of trout i caught then smoked them, about one of the best things i have made. Thanks everyone, i'll let ya know how it turns out.

Jamaican jerk wet rub, the dry doesn't have the kick. Recipe Use dry jerk seasoning so you don't have to hunt up seprate seasonings like 3 tbl spoons  This is all eyeballing it so taste as you go if you need to A good handful of roasted red peppers 2 or 3 fingers of minced garlic 2-3 fingers cillantro 1 bunch of scallions chopped and 2 or 3 hot peppers depending on how hot you want it (I prefer hot banana peppers or hungarian hot waxed) seeded and chopped) You can use other peppers like habbanero or scotch bonnets just avoid jalepenos they have no flavor. salt to taste toss it in a blender or food processor and turn it into a paste if it seems too wet just add more dry jerk rub. Get the grill good and hot and smear the rub all over the chops.

now thats what im talking about. i got a bunch of habbaneros in the freezer that i grew last summer, i need to use them up. i'll try yours next, i got tons of prok chops i buy organic pigs from my old high school shop teahcer. if you haven't eaten a free range organic pig i highly recommend it. store bought pork is garbage compared to it.

Just go easy on the habeneros maybe 1 to 1.5. I've had wild boar it is bomb. BTW that recipe works well on all meats and seafood except lamb.
