Seeking advice for outdoor grow, N. Wisconsin - shiitake/oyster/maitake

My uncle-in-law is really excited about doing some outdoor mushroom farming with me in Northern Wisconsin (roughly Eagle River area fwiw). He has tons of land and basically access to as much wood logs as we could want. For us, it's going to be for fun and deliciousness, but I am also hopeful it might provide some side income for his son if he gets interested. Because my experience is purely indoor cultivation, I am looking for advice as to strains, timing, pitfalls, etc.
Shiitake - I currently have the following strains: S75, 3782, CS, straw, and a house strain from Sporeworks. I have not yet fruited all of them as several were recent trades.
Maitake - I currently have an unknown strain from Sporeworks and am getting AZ in a trade shortly.
Oyster - I have Brat, K12, blue, and phoenix.

I was thinking logs for shiitake (obviously), log totems for oysters, and buried sawdust blocks for maitake, although I also read about colonizing log sections and burying those.

I have a bunch of dowels but probably need to pick up a few thousand more - does anyone know how early is OK to inoculate dowels? For the oyster totems, I was imagining making a bunch of unsupplemented sawdust bags unless someone has advice.

Should we be looking at wine caps as well (never tried them before)?

I am really excited and motivated to make this happen, so any reasonable advice will be taken seriously, including investing in new cultures or equipment.

I assume you know iof Field and Forest, if not they are an outfit near Peshtigo you could look up.

I've done SRA, oysters, and shiitake in Stevens Point, but unknown clones of all three....

Thanks, I am familiar with F&F although I've never purchased from them. I might drop them a line if no one has opinions about using the strains I already have outdoors. Do you have any observations about what worked best for you? Any mistakes I should avoid? Thanks!

thats a good resource.  i would try with the strain u already have, just to save some cash.  i have fruited the spore works shiitaki, and it still pinned in an 80f GH in my apartment.



even though i only got a few fruits, it was the first time i ever did shiitaki!!  i'll never forget it!
