when incubating WBS jars does humidity matter?

The reason i ask is because it is cold where i am so i have to use heaters to keep the temp. between 65-80 degrees.

Also
I started two jars but didn't care about the temp and they stopped. How come they don't start up again when I put the temp to 80 degrees?  Did the cold take the moisture out?

My room where I stack my Jars is usually around 10 % humidity . Never had a problem
