burst rye grains...

hello everyone, i am just curious on how to prevent rye grains from bursting? i have followed RR's rye grain prep video and the first time 1/3 my grains burst. they were rinsed, soaked for 12 hours, then boiled about ten minutes. after they steamed dry and were loaded into the jars my moisture content was quickly offset by the burst grains. it added a lot of condensation from the exposed insides of the grains.
so the second time i rinsed them, and then soaked for 24 hours and boiled for 10 minutes. this time i had much less of a problem, but i still had a few burst here and there. so from all of you experienced guys, how many popped grains are acceptable would you say? do you always have a few burst? and are there any ways to prevent it?

Don't boil for 10 minutes exactly, that's more of a rule of thumb.

I cut the heat when I'm stirring and I pull up a burst grain or two on the bottom. Make sure you're stirring when it reaches a boil every once and a while so the grains on the bottom come to the surface. Prolonged exposure to the hot side of the pan will cause a lot of bursts.

I'll drag my spoon through once and if I see a burst grain I say okay, drag it again and if I see another I cut it.

alright cool. i wasn't sure if 10 minutes was a rule of thumb or a direct necessity.

my PC should be here in a few days, so at least i have some practice when it comes to prepping grain.. i need to buy more though. it sucks that i can only get 8 pounds at a time at the health food store. they have it in a coffee bean type dispenser where you put the bag underneath and fill it up. last time i was there i filled several bags (they are small) and emptied the whole thing. they looked confused that i wanted so many rye berries, and i felt weird, so i bought some sweet potato chips as well to change the conversation.

See if you can find a co-op. They usually carry them. I buy the 50lb bag and they give me a 10% discount. :smile: I pay about 45$ for it.

Damn that's a quick soak. I'm pretty new to grains and too scared to deviate from the tek yet haha. Gotta get a couple mono grows under my belt first :smile:

I wouldn't recommend a 4 hour soak for rye,

Rye gets a lot of its moisture content from the soak but if it works for you :shrug:

yeah after my soak i do a little simmer for a few too. fucking makes my house smell like horse dick too! hate it.

I believe the boil is simply to get them 'steamy' so they dry off faster ...right? :confused:
Most of the moisture content is done during the soak, or that's what I remember.

Burst rye berries could = a hell of a bacterial mess if things get contaminated.

The longer you soak your rye berries the softer they get.

Yup.

Some people go straight to boiling with rye though. Works okay.

A co-op is a term from a bygone era, where local farmers would pool their money together to get discounts for seed and feed, etc... Essentially it's a feed store.
