I actually just started hydrating some rye berries this morning... I'm not familiar with that tek, but are your referring to drying after boiling them?

Hmm. Well I'm completely new to grains myself, so I can't comment with any authority.

I wouldn't think this would be a dealbreaker step -- as long as the grains are properly hydrated and dried. Hopefully someone with more experience will chime in!

I've never covered drying grains, it's counter-productive.

It should be alright the top layer of seed might get a little dry that's all. Mix it up before adding it to the jars. If it seems too dry you can always splash a little water into it. I however prefer my wbs to be on the dryer side so I always dry without covering.

My favorite wbs method is to get a pot of water boiling. Then add the seed, cover the pot, and immediately remove it from the heat. Let it sit for about 2 hours then strain and dry. I dry until the seeds don't stick or easily fall off the side of the jar when tapped on a table.
