Habitat:
Cow poop in tall grassy fields after decent rain

Gills:
Brown gills, dark purple spores

Stem:
Thick, blue discolouration

Cap:
Gold top, olive smooth skinned with browning edges

Bruising:
Blue

Looks like cubensis but I'm not familiar with mushrooms from your region. If you cut the stem does it go blue?  If it is cubensis it's nice large specimen

Definitly looks like cubensis. If there is indeed staining then I have no doubt especially coming from cow dung. Good find! Im no TI so you still should wait.

As they mentioned above, it's most likely Psilocybe cubensis. I would like to see photos of the bluing if possible to confirm.

Yeah they can grow the size of dinner plates. I used to see them get that big back when I was hunting.
