Newbie Grower, 2nd PF Tek Attempt

Hey Shroomery Crew
I took a good look through Search before posting, but I was looking for some solid answers before proceeding. Thanks in advance! I'm currently on my 2nd PF Tek attempt, my first ended in some serious contam during the colonization stage.
This time around things are going much smoother. I have 6 cakes nearing the end of the grow stage, no contam in sight. The problem I'm currently having is some serious invitro pinning, with the cakes being not yet 100% colonized. The outside of the jars show about 80-90% white coverage, but the remaining space seems to be at a stand still. In the mean time pinning has started and is beginning to become fairly intense, a few of the jars have decent sized mushrooms pressed against the inside of the glass, with new clusters forming everyday. It has been incredibly cold where I live as well, anywhere from 10-20 degrees F, and the heaters in my apartment are unfortunately nothing too special. From what I read by searching it seems the general response is to keep waiting until the cake is fully white before birthing, but I feel at this rate I feel the mushrooms may take over. What to do?!
My second question pertains to my SGFC. Since I only have 6 cakes I decided to start with a smaller bin. The Tek I am following suggests 2mm holes spaced 2cm apart on the bottom and bottom half of sides to prevent perlite from falling out, with 6mm holes spaced 5cm apart for the upper half. Drilling the 2mm holes in the small bin was hellish, I had to re-drill the same tiny hole multiple times to get whatever plastic was still clogging the hole, not sure I could use this same process on a large bin. Would 6mm holes spaced 5cm apart along the entire bin work okay? In hindsight I'm really not too worried about making a mess with the perlite. Also, while the sides of the bin are transparent, the top is opaque. Do you think it is necessary to cut a hole in the top so that light may hit the cakes better?

You probably have a contam. Pics. If not then I'd birth the cakes.

Not a good tek. Do 6mm holes spaced 5 cm apart on all six sides. Get coarse, chunky perlite. It will not fall through.
Part 3 he builds one.

Thank you TaGyo, always helpful! Yes, I think I'll be discarding that first SGFC in favour of one with 6mm holes throughout.
Here is what my little guys currently look like, more pins pop up daily, but the un-colonized space has been at pretty much the same level for a week now. I was trying to be patient, a new concept for me haha

BIRTH, Wash the uncolonized parts in the sink. It might just be dry verm that fell underneath the barrier when the cake shrunk from against the glass. Happens to me sometimes.
Dunk for 24 hrs then roll in dry vermiculite.
