Does it make more sense to extract 'the goods' from mushrooms...if you'll be charged by weight?

Or, would that bring up new charges?
Say you're busted with fresh mushrooms. They charge you by the weight, correct?
If you extracted the psilocybin from them, they would weigh less and it'd be a lesser charge. Is this a pretty legitimate view of things?

Could be manufacturing a controlled substance if they catch you extracting it or find the glassware you used.

That is correct, but there are some things to think about. Extraction to the pure chemicals is very difficult (crystals of the gods tek does not work). At best you boil/tincture them and boil that down to a brown hash-like goo. That is quite active, but you would lose some actives in the process, and might change some of the molecules as well.
Legally you are better off making them not look like mushrooms at all.
For short term transportation, making fresh ginger tea is a good idea. That increases the weight, but you have to really piss them off to make them arrest you with tea and send it to the crime lab.
An even better way is to powder them in a blender or coffee grinder and put them into capsules, then put the capsules into a herbal supplement bottle. That way they just find echinacea or whatever, and when they look at the pills they look like what they expect to see. That way they are nearly legal unless you or someone tips them off.

I'm trying to imagine the dialogue that would occur before "fuck this, send this tea to the lab...before it gets cold" gets said.
The capsules work quite well, but is rather time consuming to prepare. Plenty of folks are plenty happy to be eating capsules instead of fruits anyways.

Not quite. I'm not certain how it works on the state/local level but if you're popped by the Feds your punishment would be based on the weight of the extracted psilocybin. According to Federal sentencing guidelines, they view 10 mg of psilocybin as equivalent to 5 grams of dry mushrooms. 5 grams dry carries the same penalty as 50 grams wet.
With that in mind... If you are caught with psilocybin extracted from mushrooms that are particularly potent you very well might dramatically increase the severity of your punishment than if you were caught with them dry.
