Happy 2015 everybody!

So this is my first time growing anything other than oysters indoors. As described in this thread, I have four 3T filter patch bags filled with different recipes of wood-based sterilized substrate. I noc'd them up with wbs spawn on 12/17/14. One is G. resinaceum, the other three are shiitake. I think they're fully colonized now. But I have some questions.



Above is the first bag, shiitake 3782 on the recipe with pine wood chips and hardwood sawdust (small amount each of oat bran and gypsum). Its beginning to get fluffy and knobby on top, with a few browning spots. But if you look at the bottom, it appears that it isn't 100% colonized. Maybe a wee bit too much moisture. I'll try flipping it upside down so that moisture moves through the substrate.



Here you can see the second bag is about as colonized as the first. Also beginning to fluff on top with a few brown spots. But the second picture shows some weird knobbing (the "popcorning" I've read about, perhaps?). This recipe is 50/50 fine hardwood sawdust and vermiculite. Same amount of bran and gypsum as the pine recipe.



This is the third bag, an unknown culture of L. edodes on the same recipe as the last (50/50). It was the slowest to colonize and still isn't 100%. It also took longer to colonize the grain spawn. This bag also has what i'll call popcorning for now. The first bag, grown on part pine, has no popcorning.

So, here are my questions:

1. what is the popcorning? is it indicative of anything? will it affect yields? can i/should i try to prevent it?

2. when do i cold shock and begin fruiting? what signs do i look for?

3. should i remove the bags if I put them in a good fruiting chamber with high humidity? i read a bit about the blocks browning when the bags are removed and this is good for production???

4. any other advice you might offer. this is my first time fruiting shiitakes on blocks indoors

I made my first blocks on the same day

I would like to know about this as well, mine have the rad lumps on top and didn't fully colonize the bottom either. They're kind of stalled out at the moment
