humidity through heatelement?

Hi all
I am looking for an easy setup for a fruting chamber for cakes.
keypoints for a chamber are afaik high humidity, temperature between 23-30 C
and air exchange.

Would this setup work:?

a big plastic box filled with water (a few inches) and an aquarium heating element
(set to 27C) in that water.
Then some racks in the water, where the cakes could be placed above the water.
Then i tested this (without cakes) a very high humidity build up in the box shortly
(Water was dripping down the sides and the top from condensation)
So i assume humidity would be more then ok.

Accidentally i let this testsetup run for a week, then i rechecked today, i discoverd,
that the bottom of the box felt slippery. (Probably alga growed there)
So there might be the question if this setup maybe too sensitive to contamination.
(Maybe putting some germ killing chemicals in the water would be the awnser)

Has anybody an idea, if this setup might work for cakes?

Salt and h2o2 should prevent bacteria in the water. (?). Search for amounts.

h2o2 seems like a good idea.

you meant common salt?

Did somebody already tried to get humidity for cakes through an aquarium heating element?
