Maybe genetics? They're not aborting or anything cuz they are still growing and look healthy.

I don't know man, could be genetics. Could be the moisture content of the sub too.

Man the bulk was perfect when I spawned it, I mean perfect. I've been giving them a light mist in the afternoon because there are so many of them. I hope they get a decent size before they need to be harvested.

Probably because your keeping them misted... 

I find when my mushrooms are wet they shed the veil early sometimes, with a pinset like that though, you have no choice but to mist them or else it will be abort city. 

Don't sweat it, that tub looks awesome!  Pick them just before the caps start inverting to drop spores.

I've had fruits before that have opened really early like that and kept on growing into normal size mushrooms.

The cube mycelium don't like alkaline either much but they tolerate it and use it as a pinning base just fine.  The whole point is for it not to colonize the casing, a casing is used for moisture retention and micro climate; they don't retain moisture or create climate well when they are colonized.  The high pH and low nutes in a casing will make it become minimally colonized and contam resistant.  Cubes substrate on the other hand should always be on the acidic side.

pH levels DO swing over time...  The key is to add things like gypsum or crushed oyster shells which act as a buffer and keep the pH swings from happening.

We use lime (calcium hydroxide) for the initial pH boost up to 7 or 8.
