Shiitake and Blue Oysters: Part 2

Tomorrow is the big day. I'm finally going to get some straw, and hopefully get my Oysters off the ground. After Christmas I plan on getting the Shiitake ready.
I made a similar thread about a week ago, but it pittered out quickly because I was still in the process of collecting information on the specifics of cultivation and simply didn't know the right questions to ask. I've read the forums and several other sources, but there are a few questions I'm still left with.
1. Would it be ok to inoc my Shiitake logs this time of year? This was something I was settled on until today, when it finally clicked in my head that felling time and inoculation time isn't quite the same time. The winters in TN never get very bad, mind you.
2. How often should I water my logs, and what method should I use for doing so?
3. In about a year or so or whenever they start pinning, how many flushes can I expect? Someone locally told me that I should be getting flushes every three weeks after that initial several month period of colonization... but I can't find any more details on this.
For my Oysters:
Is there another method I can use for pasteurizing my straw? I don't have many barrels laying around, so a more simple method (or at least, a more accessible one I guess?) would be great.
Once my straw is pasteurized, then what? The guy at the store where I bought my sawdust spawn said to lay the straw out on a sterile table and break up the spawn, mix it all together, and stuff them into the bags.. not very specific.
What should my spawn:straw ratio be, exactly? How should a ration out my spawn?
After my bags are good to go, will they grow well outside this time of year? If so, would I be fine hanging them up in my rather cold garage? If not, will the bags do well indoors in my usually room temperature house, sitting on a shelf?

For the oysters on straw: a large pot on a propane burner will work for small batches. i have a 5 gallon pot with an insert that is like a pot but has a bunch of hole sin it, i pack the straw in the "basket", pasteurize in the 5 gal pot (160-180 interior temp for 1 hour). that will fill 3 turkey bag sized bags. I get 2-3 flushes out of straw before the fungus gnats find it...

I started using just dishsoap for a surfactant and hydrated lime to spike the pH to around 11-12. Soaking in that concoction overnight did the trick to give the mycelium a head start. I used that for growing my oysters most recently.

Where would be an ideal place to hang by oyster bags this time of year? I hear BO's do well in the winter, but where, exactly, should I hang them? Should I let them sit inside to colonize for a bit, and if so, what conditions should I keep them in?
