Golden/Yellow/Pink/Blue/King Oyster Mushroom Differences.

Do all Oyster mushroom types have the same marketable value? I realize that King Oysters go for around $8-12, but I cant seem to find out what a Golden Oyster mushroom would go for at a farmers market. I'd love to hear from someone who has tried to sell these more "exotic" oyster types.

You could try marketing yellows and pinks for more.  My strategy was to sell mixed boxes for $5/4oz (blue, brown, pink) and blue or brown for $4/4oz.  We always sold out of pink and mixed boxes first.  For restaurants they are all the same price from me.  I base my prices off yield and they all yield about the same.

Thanks a lot for the info! You mentioned that the pink sell out faster than the brown and blue -- is this purely down to the aesthetics of the mushroom? If that is the case, would growing Golden Oysters perhaps fetch a higher price (it is a beautiful mushroom in my opinion).

The sense that I get from reading many threads on this site is that making a success out of mushroom farming is down to marketing -- is this assumption fair?

You gotta do direct sales to make money, so if you don't have local competition then just approach people with quality product.  Yellow and pinks are not available nationally (at least in my region) from wholesalers.  Whether it's farmers markets or restaurants the product sort of sells itself.  I'm bad with people and marketing and haven't had much trouble getting rid of shrooms.

Yup. Every description of the taste of pink oysters I have ever read has said that they have no particular taste and that they are a more decorative item.

But, people buy them because they look cool.

Thanks for the info. The one thing I've been rather curious about is the relatively short time that a harvested oyster is able to stay fresh/whole. From what I've read, the oysters can be stored for about 2-3 days, thereafter losing taste and aesthetics becomes a concern -- is this true?

If it is true, and lets assume farmers-markets are only open on Fridays/Saturdays, what do you do with the shrooms that need to be harvested on a Monday (assuming your supply is not reliable enough for restaurants to rely on you)? Do you can them? Dry them? Sell them to friends?

Interesting. I never really thought that the aesthetics of the mushroom would be so important. I guess people really do eat with their eyes.

They will be sale able for up to a week if you harvest them young and package them properly in the fridge.  Usually they just hang around for 2-3 days max.
