substrate,casing, and chamber Q's from a newbie

Hey all this is my 2nd grow in 3 years(first wasn't very successful) and I'm about to try again. I was hoping I could ask a few questions since you all seem to be a very knowledgeble cultivators.
I have 4 syringes(koh sumi & african transeki) that are about 3 weeks old and I will be innoculating the koh saumi onto birdseed and the african onto BRF/vermiculite. I think I can handle the african okay for now, I just want to use cakes. But for the koh saumi, I'd like to use the birdseed as spawn onto some sort of substrate(any suggestions? no poo!) and case them(50/50) using large containers with lids, so I don't need a fruiting chamber. I thought I could put one casing inside of another container filled with water/H2O2 and a water heater. Would I need to have air exchange inside of the closed casing?(humidity issue?)-air pump? This is essentially my first grow so much help is needed!! Thanks! - Humpper
Oh yeah... anyone with Af. Transeki experience that could give some advice?

Also...when I case..do I need to incubate for a few days till I see mycelium?
