I've looked through dozens of posts just to run into the same answer; "it depends". I understand that, but there has to be some number to atleast shoot for.

I'm looking to start a small business with a couple investors and the only thing I'm unsure about is what to expect. Specifically, I am growing Lion's Mane and Golden Oyster. I will be spawning them to half gallon jars of rye (luckily one of my investors has about 6 tons of bagged rye jus laying around) and then inoculating mycobags full of sawdust and wood chips supplemented with gypsum and bran. I plan on filling the bags to about 5lbs.

I know many people must have done this before. Any help is appreciated.

I can get close to 100%BE on lions mane.  Over 3-4 flushes.  That's 3# off a 7# block with 3# of dry ingredients.

I got 1# first flush off my yellows last time but I haven't got much experience with them.  I'd shoot for at least a pound per block.

When I made my business model I started with how many blocks per day I wanted to make, how much money I wanted to make, business costs (fixed and variable).  From there I figured how much I need to make per week in revenue and how much yeild I need per block to make that happen.  For me my business can work with a pretty low yield per block and anything extra is nice.

Thanks for the reply. I'll just go ahead with 1lb/bag wet weight then.

I'm planning on bagging 500/week to start with so I can get a feel for the market. I am by no means business savvy, but I am pretty good with math, and I believe I can make a decent paycheck.

After I get a feel for the market and prove my business model to my investors, I think my only issue will be growing too many mushrooms to sell locally.

I would recommend you practice and no the answer to your question in your unique circumstances before making 500 blocks.  Otherwise you are making a big gamble.  Also, Moving 500 pounds of mushrooms per week requires established accounts.    You may end of tossing out lots of mushrooms after all your labor.

you plan on buying spawn?  that has been my latest trouble.  this business will bankrupt you in a hurry if you make big gambles like you're talking about.  no one goes from their closet to 500lb/wk over night.  not without making a lot of mistakes first.
