PF Classic #56

I have had a few successful attempts growing "gulf coast" using PF Tek and RR videos however this is my first attempt at doing bulk substrate.
I followed Frank Horrigans journal on the WBS prep, coil/verm/gyp mixture and the pasteurize tech. Colonization of the jars went well and when I opened them up they all smelled like mushrooms with no sweet, sour or ill smell. Got a 50/50 mixture of substrate and colonized PF classic #56 and put that into a mono-tub for about 13 days then I put in the polyfil and exposed it to 6500k light on a 12/12hr cycle with a fan in the background NOT blowing on the tubs. About 8 days later I saw my first pins. It is day 11 and I am a little worried because the shaft of the mushrooms are very fat but the head a very small and I noticed a different color ontop of the head other than the brown. This is my first time with this species. Is this ok for this species or a contam? Do I need to let them all try to get to maturity before I harvest?
Thanks for any help.

Here are some more pictures. They are growing but the stems/body is huge and the caps are very small and don't really open up.

So your saying when it comes down to it, it look like the genetic of the spores and not a contam? I did everything by the book and took my time making sure to be clean however I know its not a definite.
Just want to make sure that I can at least finish them out even though the yield may not be the best.

They probably shouldn't be growing like that.
Your humidity may not be where it needs to be producing small fruits and dried caps. Not sure though, I haven't hit this stage in monotubs so I'm just hoping someone with experience answers.

I was right.

EDIT:
Loosen polyfill a little to get more FAE. They don't have enough humidity in there.
