It depends on how you're heating it. A gas stove will heat it a lot faster, but my crappy electric stove heats my 36 qt. All-American in a whopping hour or so....

It shouldn't matter that much. Just don't let you stuff get soaked.

^^yeah, don't let em get drenched^^
my bud's radiant range heats his 12 qt. Presto and gets it up to pressure in only about 10-12 minutes. Through trial and error, he learned to get just the right amount of water in there... about 3/4" from the bottom does the trick.

Yeah -- right? I was having this problem with presealed bags -- they were deflating when cooling and sucking shitloads of water in -- I found out I only need 1.5 quarts of water.

Really big pressure cookers take a lot longer, though -- my 8 qt. heats up in no time. It still takes like 1 hour or so to pressurize my 36 qt. with 1.5 L water.

fill it up with hot water and turn the stove on while you load jars. takes a lot of time off.

I recommend loading the PC, then turn the stove up to it's highest setting. When you can see/hear the water bubbling, it's time to put the lid on. Wait about 15 minutes after that for alot of steam, then put the stopcock on. If you weigh the stopcock down, it can decrease the time
