break between colonization and fruiting??

I'm new on this forum and new to cultivating mushrooms. That being said I've followed my TEK thoroughly so far. My jars have maybe another day or two till full colonization.
However my problem is that I have to fly home in two weeks for two weeks of Christmas break. Obviously I did not plan this well a month ago when I decided to start cultivating mushrooms. So hopefully someone here can tell me what I should do next! Are the colonized jars good to just sit around and wait for me to get back? Should I refrigerate them to put the mycelium into dormancy? Maybe I should just go ahead and dunk the cakes and then fruit them and they may not be ready for harvesting till I get back? Ideally I'd like to be here to watch them grow but if I cant I cant:/ Any help would be muchhh appreciated!

Wait a week after full visual colonization, then stick them in the refrigerator. They'll be fine for a few weeks..Although, I only say that from experience with grain jars. I'm assuming you're using PFtek, so maybe wait for someone else to weigh in.
Or do it on the plane like blindingleaf said

Haha, they were just messing with you about that i'm sure.
I've heard of people leaving their brf cakes colonised in the fridge for a few weeks and it was fine. So that is probably your best bet.
Whether to do it after the consolidation week or right away I am not too sure. Someone will chime in though

Yeah, I would put them in the fridge right at full colonization, then dunk and roll when you get home.

Okay I'll give it a shot! Oh and what's this dunk and roll thing? The TEK Im following says to dunk and place in a tub with a thin layer of damp perlite on the bottom. Is this not the best way to go for fruiting?

Nope, you're looking at an outdated tek.
