Pasteurization question

I heard that pasterizing is not only getting the core temp to whatever f its also cooling it fast after .

what are you guys doing after the cooking ? put it in cold water ? or just get them out of the pc ?

I usually do my pasteurization right before I go to bed so just I pull them out and set them in a tote to cool over night, mix up my bulk in the morning.

You said PC I am going to assume you are just using your PC as a big pot to pasteurize your bulk substrate in correct?  Pasteurizing and PCing are two totally different things.  I am sorry if ya already knew that.  I only said something because the wording of your post.

Also if ya put hot jars in cold water then more than likely your jars will break.  Glass can't take temperature fluctuations like that.  MustardTiger66 is right.  After you get done pasteurizing your bulk substrate just pull them out of the pot and set them on the counter to  let them cool over night.  Cold water afterwards is not necessary.

I would just let it cool naturally at room temp. The extra cool down time will probably help the pasteurization process somewhat anyways.
