i cooked some up last night, but it didnt really suit my tastes for a supper meal, it was abit sweet and i would recommend it as a small desert, maybe sprinkled with cinnamin....
all i did was buy a can of coconut milk, with pulp(jelly) from the asian foods section at superstore, and substituted the coconut milk for the water...and added abit of butter...then cooked it like you would normaly cook rice..

Pulp?
My coconut milk has no pulp. Are you sure you didnt buy coconut cream?
I like coconut rice with scallions, it's incredibly tasty. Coconut milk really isnt very sweet in itself.

We make coco rice @ my Job, actually coconut ginger rice. Get a handful of ginger root and put it in a blender w/ coconut milk, pass it through a shin wa (sp?) to get out the fibers. small dice giner and throw it in w/ the rice.

Just a tip for all, Chaokoh brand coconut milk is the best I've found so far. I'm a Thai cuisine enthusiast and it's the best I've had (in that it works the best for curries and soups, not sure about rice but I imagine it would be the same) Cook on

stay away from the CoCo Lopez (unless you're making a pina colada) look for "coconut milk" it usually comes in a blue can, it isn't sweet in the slightest and make sure you shake the can thoroughly before using. Also, don't use all coconut milk, try going half water or a 1/4 water and coconut milk.

When you people say "coconut milk", do you mean "coconut cream"?

NO. Those are two different products. Coconout milk is usually in the asian or international section of the supermarket. Coconut cream is usually found in the mixed drink section. (coco lopez)

Not here. Coconut milk and cream are usually next to each other, and coconut milk is just watered down coconut cream.

coconut cream has sugar and/or cornsyrup and other shit added, coconut milk is pure 100% coconut (juice blended with the meat and strained)

Actually, the only difference between coconut milk and coconut cream is which pressing it is. To make coconut cream, shred some coconut meat, soak it in hot water, and strain and press to get all the water out. To get coconut milk, do the same thing to coconut that has already had cream extracted. It's recommended that you not extract milk more than twice. Think of it as extra virgin and virgin, like olive oil.
