How exactly does combustion release energy? I understand he energy is released from potential energy stored in the bonds, but I can't conceive this. Is potential energy of the bonds converted into heat the same way gravitational potential energy is converted into kinetic energy? Or is it that heat is released when bonds reform?

In the combustion process, heat is present. When that heat exceeds the 'heat of combustion' (often > kJ) the bond is broken and more energy is released. This energy is great enough to break surrounding bonds, sustaining the combustion process. In the case of high explosives, this results in an extremely fast reaction, known as detonation. In, say a campfire, this reaction is much slower and this is called a deflagration. I hope this helps.

when bonds are broken this doesn't release energy, energy is released when bonds are formed.

this is an energy diagram of combustion. it releases energy. not more than it takes to break the bonds, but the energy it releases just happens to be at a wavelength that produces infrared radiation as well as light radiation.
