so i've been making tomato sandwiches lately and they are turning out great if i don't say so myself.
1 whole pita (i use wheat ones) 2 slices cheddar cheese 1 tomato, sliced 1 handful of chopped onions 1 handful of mixed, pre-washed greens 1 small can of black olives, sliced olive oil & vinegar dressing (paul newman's is the best i've tried) salt and pepper
i first set the tomato slices out so i can evenly salt and pepper them. i then toss the onions, greens and olives in a bowl with a little bit of dressing. i fold the slices of cheese into small squares and line each side of the pita with them. after that, i add the tomato slices and stuff the rest of the pita with the greens. very filling, inexpensive meal that makes me feel good after having it.
i'd post a pic but i already ate it. i might try out a wrap when i'm out of pitas.

a turkey sandwich
2 slices of bread deli turkey mustard
lay the turkey on once slice of bread, evenly
squirt tons of mustard onto the other slice of bread
lay the mustard piece face down on the turkey
quarter cut the sandwich
add potatochips for a side
and thats how you make an epic sandwich or maybe i have simple tastes

Mixed wild mushrooms, roughly chopped Goat cheese @ room temperature fresh thyme garlic minced salt/pepper/msg arugula butter truffle oil Ciabatta or other Italian bread
Saute the mushrooms over medium-high heat with some butter. Once starting to brown, add in garlic and thyme leaves and cook until mushrooms finish. Remove from pan and set aside to cool. Optionally you can deglaze the pan with a little water, reduce it to a syrup, and scrape out into the cooling mushrooms for extra flavor. Once cooled off to room temp, add the mushroom mixture to a food processor with the goat cheese and pulse until the mixture is uniform but not pureed; you want chunks of mushroom for texture. Drizzle in truffle oil and mix in salt/pepper/msg to taste. Set mixture aside. Then pretty much just put this mushroom spread in some ciabatta with the arugula, and make a panini with it in a pan or a panini press.
Sorry I don't have quantities I usually just throw enough for one sandwich together real quick without paying attention. You want enough goat cheese to bring the mushrooms together and make a spread, think tuna sandwich or potato salad consistency.

Three pieces of bread Adding in a few slices of turkey, salami, and ham Add slices of cheese, usually cheddar adding in some chihuahua/mozzarella for gooeyness when microwaved Add giardiniera. Add sriracha add crushed red peppers add garlic, chopped and raw mayonaise/mustard (when I have Colman's that's what I use here)
Microwave for like 30 seconds.
Eat like a barbarian.

I don't do anything special with my sammiches. The sandwiches I make most commonly at home are either roasted turkey, cheese, lettuce, and a bit of tomato or a grilled cheese with caramelized banana slices. The latter is one I make a bit less often but is my favorite of the two.
2 slices of 100% whole grain or multigrain bread, some provolone and smoked super sharp cheddar slices, some butter, some bronw sugar, and some bananas is really all you need. Slice up banana into fairly thin (roughly as thick as your cheese slices) pieces, coat them in a bit of brown sugar, throw some butter in a pan and fry em up until they start caramelizing (usually about 2 minutes on my stove to get em nice and golden brown) before flipping to brown the other side, which generally takes about a minute for me. Then grilled cheese. Add butter to one side of both piece of bread, then Bread -> Smkd. Super Sharp Cheddar slice -> 1 layer of the banana slices -> Provolone slice -> 2nd layer of banana slices -> SSSC slice -> Bread. Cook grilled cheese as normal on grill or in a pan. Devour like a crazed beast.
