Prime Rib Mondays....

So I bought myself a $70 pice of USDA Choice cirtified Black Angus bone-in Standing Rib Roast (center cut).

This means PRIME RIB...

Only questions is, what do I eat with it? Im gona go to the store in a few hours and I need something good to make with this...

Prime rib goes best with a sweet salad and a potato with every topping you can possibly put on it: bacon, butter, sour cream, chives, butter...  Hope you have company, $70 worth of prime rib is approximately 5.75 lbs.  Should feed about 8 people give or take a fat one.  Can't wait for pics :smile:

-Baked potato with all the fixins
-Twice baked potatoes
-Mashed roasted garlic potatoes with prime rib pan gravy
-Mashed potatoes with cream cheese and fresh chives
-sweet potato casserole
-Baked sweet potatoes drizzled with honey and ginger
-sweet potato or regular potato pancakes/latkes
-Yeast rolls
-Garlic texas toast
-Drunken apples
-roasted mixed vegetables (carrots, onion, potatoes, celery, etc) w/ fresh herbs (rosemary, thyme, garlic, a splash of balsamic vinegar, etc)
-fresh baby carrots with butter and a little brown sugar
-Fresh asparagus with lemon garlic butter
-asparagus baked in a foil packet with white wine, garlic, thyme, btter and salt and pepper
-grilled asparagus
-garlic green beans
-Brussel sprouts with slivered almonds and garlic lemon cream
-Braised greens with pan drippings
-Spinach salad with warm pan drippings, vinegar and sugar poured over to wilt. (bacon grease substitution for pan drippings if desired)
-stuffed mushrooms
- squash casserole with ritz crackers, cream, nutmeg and butter

Aaaaaagh... I haven't got much time to resize the pics but here is one...
Ill try to make the others look good enough to upload another day.



What I have here is Grade A Choice Angus, Green Beans, Potatoes, Seasonings (wet/dry) and Gordons Citrus Vodka.

What I made was Veggies sauteed in butter and twice baked potato casserole.

I started by baking the potatoes, skinned 1/2 of them and kept the skins on the rest. Mixed with butter, milk, cooked bacon, sour cream, chives and an egg. I layered potato skins brushed with olive oil on top and added more uncooked bacon for looks and flavor.

Veggies were blanched in beef broth and sauteed. Onion and garlic were added.

More about this later.
