As long as its drying, it should be fine. If its getting slimy, then the humidity in the air is probably too high for fan drying to be effective. If you have shrooms with really thick stems, then it may be a good idea to cut them in half, or even quarters lengthwise to reduce drying time. You should also have them on some kind of screen while drying so that they can dry from all sides.

I've never had a shroom turn brown on me while drying.

Thanks vorpal. The screen idea is a good one. I cut it in half, but its still pretty big, I may cut the halves in half and lay on a screen. Thanks.

a friend of mine had a nice little fatty about 2 inches long and about an inch wide. he was drying it and it started to smell kinda funny. is it rotten? are rotten ones bad to eat? thanks...

I'm not sure what you mean by funny smell. It should smell the same throughout the drying process, but the smell may become a little fainter. If it gets black and slimy, then its no good. If its just blue where you have cut it or handled it, then it is fine.

For a big shroom like that, I usually snip off the cap and then cut the stem into 4 or more strips before drying. What's the lemon juice for?
