If you can find where that was, please link here so I can go yell at them. You should keep your cakes in fruiting conditions. How dry did they get?

Do you have any pictures of your cakes? Do they have a thick yellow layer on the outside, or bluing? Drying can occur even in an SGFC if the humidity isn't kept at the right level. For future reference, although cakes and cased substrates can definitely get too wet, you shouldn't need to 'dry them out' ever... if you feel they are too wet, just fan a little bit more often, and don't mist for a day.
Are you using a shotgun fruiting chamber?

I might give a sub a couple days where I don't mist or loosen my poly a bit but to put em in a cardboard box to dry the hell out just seems wrong. Also second hand info is often either sourcing old info, loosing the message, or just plain wrong. In the one link you posted it seemed like common consensus was to keep em in the chamber. So not the greatest sources of info to be following.

TBH they don't look good. You could give em some more time and or dunk again but if that don't work I would bury them in a shady spot in your garden and water it really good

There's is an enormous amount of bad information on this cultivation board, especially the further back in time you get your information. Sorry you followed some bad advice, you probably really hurt the cakes if they haven't pinned after two dunks... I wouldn't dunk again you are abusing your mycelium
