Knowledge needed ASAP

Hey, 2 quick questions.
1) When it is time to harvest a fruit, what do you do about the other smaller ones that seem to be growing from the same 'clump'? I can't really see how it's avoidable, but if it is, I'd like to know.
2) A stem seems to be peeling. Is this OK? If not, what is the problem?
Thanks to anyone who knows

1. Its time to harvest a fruit when you see the veil on the cap tear away from the stem. You should pick them shortly after the veil completely tears. But if a day or so goes by after its torn, its no big deal.
If the mushroom you want to pick is in a clump of others, carefully twist then pull the mushroom and it will come off. Generally if you just twist it 360 degrees it will break off. If you're worried about the other mushrooms around it, you'll learn from experience which mushrooms will fully develop and which won't. Or look at it this way, if you pull off the fresh mushroom and other pins come with it, it wasn't meant to be
A peeling stem is no big deal, their still healthy and harvestable (is that a word? ) Just look to see if there is any kind of contamination in the mushroom. I've seen stems that peel before and they're usually fine.
Hope that helps.

Well, I think you misunderstood Q#1, I know when to harvest, but I have one large, with several smaller around it. It seems to be growing from the same area. It appears that if I remove it, the other will have to come also. It does so seem as though they all will mature. One is almost there, 6 are 4 inches and growing rapidly still.
Thanks for the help on the stem! It worried me, as my parameters are fine. There is definitely no contamination.
Harvestable is a word. Though seeing it now, I realize it is rarely used!

Oh, ok ....
Just be careful. Hold the mature mushroom as close as you can the the base of the stem. The closer you get to the bottom of the mushroom the more stable it will be when you twist. If you have a scalpel you could sterilize it then cut it out if its that close?
But I'd give it a good twist and pull Mushrooms are strong little guys. The smaller ones around the big one may get bruised by your fingers tapping them but thats ok too..
