question on pasteurizing technique

So basically i have a quick question about pasteurizing, apologies if im missing something but regarding using a pillowcase or bag in water to pasteurize (which i found hard to get accurate temperatures all round the pillowcase especially the center) what is the reason we don't just put what we need pasteurized directly into the pot so its easier to heat and then straining it and putting it back in say a pillowcase to cool off ? thanks for any help

hard to judge field capacity problems. and you are also squeezing out nutrient laden water. Best to just add the water you need to get to field capacity then pasteurize in jars or bags to retain all the goodness

i think the pillowcase acts as kind of a filter keeping in nutrients. Put muddy water in a colander and muddy water drains. pick up the pillowcase and the water looks a little clearer acting as a filter keeping in what you need. plus its less of a mess.

tie the pillowcase opening around the thermometer and you dont need to get the inside exactly. just heat it up til it hits about 150 and turn off the fire, and keep covered for desired pasteurization time. itll continue to rise to 165-175. mine never went above 170. but yea the pillowcase keeps everything inside and if you put it directly in the pot, the sides of the pot etc, get hotter then wut the thermometer would say, breaching pasteurization and headed into sterilization.

Pillow cases suck!!! Part of proper pasteurization is the rapid cool down after the 60 min soak at 160 degrees. A pillow case takes too long to heat up and too long to cool. And they are messy and they cause loss of nutrients. Don't do it. I've done it successfully in the way past, but it's also bitten my ass. Use half gallon jars op.

The bucket pasteurization has worked well for me. If it works, do it.

maybe I should have put a comma in there. If you're using CVG only, the bucket tek works. not only the bucket tek works for CVG
