Checking Trays = Trich

I have a few metal trays that I've been trying to colonize and trich is a persistent little @$!#& for some reason..
The Details:: •4" x 10" x 3 &1/2" deep metal trays (Wiped down with 70% iso. alc.) •Rye Berry spawn (looks great, smells great,fully colonized) (1 qt per tray) •Damion's 5050 Bucket Tek •Spawn and prepped sub mixed in a large bowl for consistency (Bowl was NOT cleaned with iso. but with soap)(problem???) • Spooned into trays evenly •Covered with aluminum foil that was wiped with 70% iso. alc. •Left to sit in closet at around 75° (room temp)
The Problem::
The first batch I waited 5 days to take a peek on the progress (25%-30%). All looked great and smelled great. 5 days later trich was EVERYWHERE. Tossed.
Second batch I waited 10 days. All looked great and smelled great (65%). Checked again 6 days later, trich EVERYWHERE. Wth... Tossed.
What To Do??::
This time around I'm using saran wrap so I don't have to lift the cover and expose uncolonized sub to the open air when checking the progress.
Do you think the trich is coming from removing the foil to check the progress on the trays??
Any advice and/or help is appreciated!!
Thanks,
BLiNK

Not really any gas exchange I guess. They're covered in one sheet of foil each and sealed around the edges.
EDIT:: I also feel like keeping them in my closet with all my clothes may not be the best idea. I'm thinking of moving them somewhere there might be less dust floating around.

Will holes poked with toothpicks be alright?
Do the holes need any kind of filter material over them? Or will small open holes be adequate and not let in contams?
And is this lack of GE likely the reason for the trich?
Thanks so far,

no need to filter them, pasturized subs are contam resistent and we only put a lid on to kep co2 levels high and so they don't dry out, you could leave pasturized manure out on the table for a week keeping it hydrated and it won't /shouldnt contam. yep toothpicks would work i use a bic pen

Yeah, I've read many times that coir is very contam resistant, which makes me hope the trich isn't coming from something else. And just the lack of GE since that's an easy fix.
