Another request for help on Chantrelles
    #20584405 - 09/18/14 06:08 PM (6 years, 7 months ago)

I am located in SouthEast Louisiana.  I am new to the Chantrelle thing.  Caught a local outlaw trespassing on my property with a bag full of them.

We gather Oyster Mushrooms often but I really like the versatility of the Chantrelle.

My question is regarding the smaller mushrooms in attached picture.  I find these in more moist areas growing out of the dirt.  The gills are 'taller', i'd guess you'd say than the mushrooms in the other pics.  Their stems are quite narrow as well.

Can someone give me confirmation that the larger mushrooms are in fact Chantrelles and also tell me about the smaller ones.

Best.

Here is a pic of the smaller mushrooms.  I will also add that the caps are somewhat tender.

Thanks for the help!

Chantrelles usually range in size from quarter size caps to 6" diameter. I found a bag full today. Some cinibar, the redish oranges and some yellow chantrelles.

You can dry them and grind them up to a power they make a good pasta sauce with some heavy cream. I pick them all the time they also are red very small but you can get lots.

Looks like you have Cantarellus lateritius and a small chantarelle species I don't know. Somebody will be along who does shortly.
