Main pinning triggers are full colonization, FAE and Evaporation off of the substrate.
Light is a secondary pinning trigger. For tropical species temperature is not a pinning factor.

Once the entire substrate is 100% colonized the mycelium decides it's time to reproduce, throw out some fruits. Free air exchange also lets the mycelium know that it's time to fruit, it's a pinning trigger. The actual science behind both, I'm a bit unsure and I'd love to see some mushroom gurus chime in on this one.
P.S. 1,000th post, glad it was about the science of my favorite hobby.

i'm not sure of the question you are asking. if you are looking for a reason, it's reproduction, or are you looking for what triggers fruiting,if so it was stated above pretty basically but covers most of it. But you said you know how to make them fruit (triggers) so what do you mean by cause? edited sorry for confusion

I meant what conditions or environmental elements cause the mycelium to produce fruit bodies.

full colonization and high humidity are up there. (of course)FAE is a big one too as said. Good genetics create more fruiting. umm i really can't think of more and i didn't add anything sorry. Not really any of these are needed to fruit though (maybe humidity) Oh yeah there are situations such as encountering a contam where mycelium will fruit as a last stand. And they only fruit on the edges of the substrate not inside except i think stones may which are considered fruits just not mushrooms. So maybe just the interference with the colonised substrate and the outside world. nutrition has some part of the fruiting process i'm sure as well

Stones are not fruits. They're sclerotia.

It's easy to get them mixed up, because colloquially they're sometimes called truffles, and actual truffles (members of the genus Tuber) are fruits, with the spores held inside to be consumed by an animal like a squirrel or pig and then dumped--literally--in a pile of nutrients for the process to repeat itself. The spores are visible when you cut into them, though:

Unlike a truffle, sclerotia are there to help the organism survive trying times, like droughts or fires. You see them also in morels and cordyceps and all kinds of disparate genera, but they're always a prerequisite for fruiting. Here's the wiki for them.
