I too just started a grow following RR's video. Follow it as close as you can. Hopefully I'll have some nice pictures to post within the next month or so.

You can greatly exceed the 60 min PC time for a pf cake with no problems. I am certain you could PC it for 4 hours with no issues whatsoever. If you run your PC dry, or forget to elevate your jars, then you could burn them. But the original statement was. . .

Ok ok! Just to make things perfectly clear:
When I said "Don't cook your jars too long, blah blah whatever", I was talking about an experience I had where I had the temp up too high, walked out of the room, got myself too high, and came back an hour later to my PC spewing steam and burnt cakes.
And I'm not that big of an idiot! I use jar lids to cover the bottom + a layer of foil over that 
I guess I should have been more clear and said "don't PC your jars on TOO HIGH of temp, cus THEN it will burn them". My apologies.
Sowwy for this misunderstanding/misinterpretation. I could have saved myself from all these exciting arguments >.<!

I am steam sterilizing my jars right now, just wondering what i could use in place of the perlite in the fruiting chamber?

While coarse perlite works best you can use several things in place of it. Hydroton, aquarium rocks, and gravel will all work in a pinch. Even wet paper towels can get you by tho you have to change them out regularly to prevent mold from growing on them.

Go to a hydro store, they have all kinds of good stuff including coir, verm, gypsum, lime, worm castings, as well as perlite and its usually way cheaper than hardware stores.

What stores have you checked? Do you have a Lowe's or Homedepot near? They both have it. Gardening stores as well should carry it.
If not order some online. If you're just starting your jars as you said you will have plenty of time before you need perlite.

I hope by incubated you mean put them on a shelf in indirect light and not in an actual incubator.
