a meal i made, nobody died

this is a meal i made as a birthday dinner for some friends while i was out of twon.

steamed vegetables, chicken sandwiches and colard greens:

ingredients:

1 lb. zuchini
1 lb. yellow sqush
1/2 lb. ochra
1/2 lb. fresh shiitake mushrooms with stipes removed

1 bl. collared greens
1/2 lb. mustard greens
1 tbs. vinigar [any kind is usualy good]
1/2 lb. baccon

black pepper
garlic
lemon/lime zest
honey mustard dressing

sandwich sliced moterey jack/pepper jack cheese [enough for each sandwich]

boneles chicken breast fillets [enough for each sandwich]
large onion sandwich rolls [enough for each sandwich]

recipe:

preheat oven to 350deg f.

vegies:
chop mushrooms, ochra, zuchini and squash and set aside.
to a large pot add 3" of water, then insert a steaming rack/collapseble collander. bring to boil.
once bioling, add chopped vegetables and cover. let steam till well cooked, being sure the mushrooms cook all the way.
once cooked, lift steaming rack/collander out, draining vegies over the pot. set aside in a bowl and put into a microwave to keep warm.

collared greens:
chop baccon and set aside.
rinse and chop collards and mustard greens and set aside.
heat a skillet and add chopped baccon. cook untill crispy.
place chopped collards, mustard greens and baccon into the large pot containing che water from the vegetables, adding baccon oil or discarding it.
add vinigar and cook on a low boil untill well done. hold warm on stove.

chicken sandwiches:
season breasts with garlic, lemon/lime zest and pepper.
place breasts in oven and cook untill well done.
taost buns and keep warm.
when breast are done, add to buns, apply cheese and dressing.
place in oven untill well heated and cheese is somewhat melting.

assmeble meal and serve.

this recipe is somewhat unorderly, as i have typed it out in the order in wich i prepared it [i wasn't quite sure what i was making till it was done :smile:]

Ive always had fried okra or had it in gumbo.. interesting. Ill have to give the steamed version a try.

just bear in mind taht steamed ochra, while verry good, is gelatenous in texture. some people will not appreciate it for this reason.
