According to Moser, here are the characteristics of Russula emetica var. betularum.

Sharp tasting
Stipe flesh not turning grey
Spore powder white
Cap not over 6 cm (usually 2 - 5 cm)
Fruiting body soft and fragile
Flesh under cap skin usually white or only slightly pink
Spores 7.5-12.5 / 6.2-9.2 ?m, coarsely warty, finely netted
Cap pink-red, centre young darker, then paling in ochre-yellowish to almost whitish spots
Under birches (but also often distributed in coniferous woods)

Your specimen certainly looks close to that description. I can't tell from your photo if it's too big or not. Also, your specimen doesn't seem as brightly colored as the description seems to suggest it should be. Still, it keys out there better than anywhere else I can see.

Happy mushrooming!
