I just fruit it when it looks ready. 8-12 days seems about average for me.
The sub started drying out because of the fan in the room. I turned it off, poured a little water on top and let it soak for about 5 hours. Then, I rinsed it off with the sprayer on my sink. It's looking good now with several pins.
I don't see a lot of change from one day to the next either. About every 3-5 days seems like good amount of pics. I'll probably post a new pick tonight when I get home from work.

Updated OP:
17 Days (9 Days fruiting) The day after the last pic, I felt the top of my sub was drying out too much, especially around the bottom holes. It turns out, my HVAC was creating a lot of air circulation in the room when it kicked on, so I covered the vent.
Then, I poured enough water on top of the sub to cover it, about 1/4" -1/2" of water and let it sit for about 5 hours. Then, I poured it off and sprayed the top with my kitchen sink sprayer to kind of wash it. I let the excess drain off. I did this by just tilting the tub. I didn't take the sub out. So, that was day before yesterday.
This is what it looks like now:

The areas around the bottom holes are still a little yellowish, but they are recovering and have pins forming now.
Let this be a lesson. Too much air circulation can be a bad thing.

i also had one dry out myself. due to my the thing holding the fan up broke and the fan pointed at the tub for 12 hours before i got home. sucks.

Yeah, it kinda sucks. Fortunately, it's a pretty easy fix. The substrate didn't really dry out, mostly just the surface. I just put enough water to rehydrate the surface. Seems to be recovering.
I only recently started using my ceiling fans. I had never used them during my other grows. I have a pretty small apartment. I think having the kitchen, living room, and bedroom fans going creates enough circulation throughout the house without having one in my grow-room

yeah i used to keep my poly stuffed in tight and use a ceiling fan. so my circulation was a little more forced. ive been using this for years. but the ceiling fan junked out. so im actually doing the fan against the wall. its proving troublesome for me because im having a tough time putting it in the right spot for all the tubs stacked to get proper air exchange. some seem to get perfect air exchange and others none at all. i tossed two tubs to contams because of co2 buildup. im hoping i can get this setup working soon. the tubs on top were getting real good air exchange. but then the tubs at the bottom dried out because my support screw fucked up.
were you running a stand up fan and a ceiling fan in the same room?
yeah you could have a ton of air circulation going on. especially if the tub is drying.

I used to not run fans at all and I started running a stand up fan with this grow. It was beside my tubs blowing away. Then, I moved it to the other side of the room blowing against the wall. Then, I turned it off and started using the ceiling fan, then I turned it off. Then I covered the HVAC vent. Now they seem to be doing well. I'm not seeing any fuzzy feet yet. If I do, I'll try turning my ceiling fan on again.

Well, got my first pin poking out in one my tubs today, must be doing something right.
I find if you have too much air circulating in the room or too much airflow going at your tubs, there is a simple way to measure it before you have mushrooms. The walls on the tub will start to go dry very quickly; keeping a close eye on your tubs helps to dial them in with the airflow in the room. You can try different things to dial them in correctly like moving the fan, turning the speed level up and down or trying a different source of airflow.
If you have a tub dialed in like Frank does, really all you should have is a dry strip underneath your top FAE holes and maybe a little dryness around your bottom holes; the lid may have a little around it as well. The walls should all be nice and wet.

I believe in Spit's scenario, it was the air circulation in the room that ended up drying his substrate.
On my current tubs, I am using EZFelt bottom holes, haven't had any problems with drying so far.

It was partly the HVAC vent too. I didn't realize how much air it was circulating. I put a candle by the tub and the flame was blowing pretty wildly. Even with the vent sealed off and no fan in the room, the flame bobbles around a bit. I have ceiling fans on in 2 other rooms that seem to be enough.

Yeah, i agree. That's what I have "ez-mags". It seems to be working ok. I have some more tubs in the works, but ez felt seems promising. Surely somebody's used ez felt for bottom holes before, but I can't find any posts

I think the ez felt bottom hole people got flamed by old hands mostly. Never done a mono myself but just what I've seen around

I have some EZ felt but I think they allow too much FAE. Everytime I use one as a filter for my grain jars it drys out the top grains and they don't colonize well. I've made plenty of filters for my bottom holes using my ironed polyfil tek and they work to precision.

Full canopy, no drying of the substrate, no fuzzy feet
