A while. They should stay sterile if they're in still air; the problem is they'll dry out after some time (usually longer than a month or two.)
Keeping them out means they're sterile if they don't get contaminated; you can tell this better than if you were to inoculate them right away.

Fermentation would happen because of yeast -- a contaminant. If yeast gets ahold it will *severely* compete with the mushroom mycelium. Refrigerating will help to keep down competitors, but if you're doing everything "sterilly" you should not have these problems. Refigerating jars will decrease the amount of competitors that will take hold during the waiting period before you inoculate your jars.
It's always best, of course, to inoculate right after cooling, unless you need an environmental control (if your jars get contaminated while sitting in the air they *are not* sterile.)

thanks, my jars will stay sterile. so should i make the jars right when i get the spore syringes (do it all at once)? would that eliminate any hassel of causing a bad colonized garden?

refridgarators dehumidify, so they might dry out your jars, after sterilization my friend stored his at room temp in plastic ziplocs with all the air sucked out of them before sealing closed, and they sat for around 2 weeks, they colonized just fine.
