after fruiting, what do i do if i don't want to use them yet? i pick them, then what? refrigerate? if so, how long and in what type of container?

an airtight rubbermaid container, with a bag of dessicant is the ideal method, after first air drying them in front of a fan for 24 hours.
dessicant can be found at wal mart, craft stores, and various other places.
most rememberable is damprid, sometimes in painting sections, sometimes in crafts...and usually never known by the employee if you ask them.
also theres baked epsom salts, which is found at any grocery store, pharmacy, etc...just bake at 400+ degrees until its bone dry. i find it best to wrap it up in aluminum foil all around, otherwise it can get messy when its first heating up.
also, theres some information in the faq i believe in dessicant, dessicant chambers, drying chambers, and various methods used.
point remaining, if you dont eat them within a day or so, they will eventually go bad. if you're just keeping them short term, a paper bag in the fridge would work ok, just not plastic, they need to breathe. if you plan to store them for long term, dry them out 100% for sure.

is there a way to store non-dried shrooms. i want to keep them freshly picked. any ideas?

If you really want them fresh, keep them in a paper bag in the fridge. They'll last about a week. For longer than that you really have to dry them.
