I'll just post this link I have not used many of these, other then Khan Academy and MIT opencourse. Khan is great for reviewing basics on math and really anything else you forgot. MIT is good for making for you really know what you are talking about. Anyways there is a lot of information out there you just need to go out and find it.

Not an app per se, but a lot of TED talks are very enlightening.
I really enjoy this talk by a mycologist who advocates the practical uses of mushrooms:
One really cool thing is that he creates a non-sporulating form of mycelium that ants eat, and then the ants take it back to their queen which kills them later. Then mushrooms grow from their bodies and drop spores which deter ants.

I don't know about improving intelligence, but i think an offline dictionary is a really great companion to a smart phone. They take up excessive download space compared to many other apps, but they're very helpful, and of course, they help your use of language. I recommend an offline one because frankly, what's the point of an online one, when all smartphones come with a web browser that can do that just as well.
