So, i have a wallet, just finished all that jazz.
Now i need to set up an account with say CoinCafe? so i can buy the coins, then transfer them into my wallet?
And then from there i can buy things online using the currency and account in my wallet yes?
Or do i use the currency in my wallet to transfer it to coincafe to buy or sell online?

Fuck, yeah! Welcome to the world of crypto currenty!
You buy from an exchange and promptly transfer the coin to your wallet. Absolutely, always, no matter what encrypt your wallet with a strong passphrase. Keep more redundant, offline copies of your wallet than you think is sane or reasonable.
You buy/sell directly from your wallet, just like you do cash. There isn't a good reason to have your coins in the exchange unless you just bought it or you are actively trying to sell it.

Following the online exchange process i came across a step i never heard before, and i read a fair amount on this topic. I'm asked to scan a front and back copy of my ID, along with a pic of my ID next to a portrait of my face.
Wow, okay that's a pretty big step in buying digital money, I think this info should be more common.

If you're uncomfortable providing so much information, there are alternative ways to buy bitcoin without an exchange:
- In real life: use localbitcoins to buy and sell bitcoin locally.
- Bitcoin-otc: an online IRC channel on freenode. "over-the-counter" exchange.
There could be more methods, but those two are what I know of.

What kind of info you have to give really depends on where you (can) buy it. In the Netherlands I can simply pay with my online banking, no questions asked.
You might want to look here for your options: http://howtobuybitcoins.info/
You could also try a Bitcoin ATM if one is near: http://www.coindesk.com/bitcoin-atm-map/
