Rye, pre-soak or not?
    #2033645 - 10/22/03 06:54 PM (20 years, 5 months ago)

Hey all,

For doing rye jars (1qt jars) in a pressure cooker do you pre-soak or not? And have YOU tried it one way or the other?

I've read several articles and posts here but tey seem to give conflicting advice on the value of presoaking, and the amount of water to be added after if you do soak so:

Can you give me your favorite recipe for Rye? Soak or not, how much water to how much grain depending on soaking and pressure cooking times at 15psi?

I'm leaning towards soaking because the one time I tried rye in the past I had a rediculous contam rate but that was with a pretty old syinge.

Thanks for your help and input.

And as a follow up.... whats with this dunking thing? It seems to be new on the sceen since I was last active a couple years ago.

Will a properly made Rye "cake" stand up to and benefit from dunking? I plan to case my knocked up Rye when its done in 8x8x2 pans. From what I've read it seems like I could just top off the jar with sterile water for a few hours after its colonized?

Thanks again,
Doc

my cat only has experiences with pint jars. He doesn't soak. He does swirl the jar around to try to get all the grain submerged. He adds ~1/2 cup water and rye, and some gypsum and then puts them in the PC 1 hour, @15psi. Right out of the PC, he shakes them to make sure all the grain is nice and wet.
