steak tartare

bit of a probe about steak tartare growing up in poland it was as common as blue sky on sunny summer day at most polish parties, i don't think i ever been to birthday party where there would be no steak tartare on the table now since i moved to australia it is such rare item it is quite surprising. any people out there know it? love it? hate it? wouldn't mind few spins on recipes as well

i know of it.. i only know of one place in the western states that has it, and i do not believe it is legal here in america..

yeah, we have this asshat of a corporation called the fda that states that all meat has to be cooked to a certain temperature blah blah blah.
they make all sorts of mistakes.

Never had tartar, but I like raw beef, I think sirloin is the best beef for eating raw. Lamb and deer are better than beef IMO. I was making some deer jerky and tasted it before drying, ate it all without drying. Lamb is the best of the raw meats, probably the safest to eat also, should be easy to get in Australia.

I guess this could be linked to Preparé or Filet Americain?
ohhhhh thats so good, it's probably my favourite to put on bread.
Martino: Cut baguette in two pieces
Put steak tartare on one piece, pepper/salt -> a few drups of tobasco preferably or pili pili, diced onion, Gherkin/Pickled cucumber, ketchup
Put one line of mustard on the other

Such a great combination.

I love steak tartar when done correctly. The issue is that there is a dangerous amount of potential error involved when unfamiliar with the dish.

yes you are right, it is very critical for both, taste and safty i for example only use meat from only one butcher and they only have it once or twice a week when it is fresh as it gets. once made up it would be eaten on same day and the next, that is it.

What in the blazes?! I'm embarrassed for us here in the states, everything is "against the law".
This is news to me. Unless my mind escapes me (which it tends to do) I recall seeing steak AND tuna tartare.

I am quite certain that there is no law prohibiting the sale of raw steak for consumption in US restaurants, as I have purchased and consumed it on more than one occasion. However, most restaurants would rather not take the risk of serving it, as it does carry higher risks of illness when compared to cooked meats. This is why you see the very common disclaimer about "raw or undercooked meats" on restaurant menus that allow you to choose your doneness when ordering meat or eggs. It's all about liability, and for the average restaurant, they are not procuring a protein product (or subsequently handling that product in a manner that is) fit for serving raw.

Ya I definitely had beef tartare at a Japanese restaurant (in CA) a few weeks ago
Foie gras is illegal here though.

Yeah, no law regarding steak tartare. Hell, a lot of places will even put a raw egg on top. It's delicious.
I used to dabble a little in kitchens and there was one dish composed of marrow bones, lamb bacon, tartare, and a quail egg yolk cracked on top of the tartare. A little line of smoked sea salt to finish.
If you start with a whole piece of meat vs. ground beef your chances of illness are almost nil.
