Re-incubate after fruiting for 2 days?

Ok so this is my first grow and as of now its going pretty damn well. Out of 24 jars that I inoculated. Only 1 of them had a small contam which from what I have read is like a rarity. Anyways I was told however, to apply the casing layer after 100% colonization of the substrate, which took like 9 days, then change to fruiting conditions. Some people are saying its better to incubate though and others say either one is fine. I want to know what is best. Im already in fruiting conditions for the past two days. Is it better for me to re-tape my bottom FAE holes, throw some tinfoil on, and turn off the lights or just keep on going and hope for the best. Please give me some input I would really appreciate it.

Incubating is not needed unless you live in alaska....room temp is fine.

Keep fruiting it.
