pressuring cooking

i just pressure cooked 3 quarts of WBS with 1/4 cup of course grade verm at the bottom and 2 1/2 quarts of casing. they all have tyvek filters. im writing this post because i was dumb and forgot to wrap the lids with foil. is this batch of WBS and casing garbage? or is there still a chance it'll be ok? anything will help, thanks.

It's garbage because you put verm in there. Your moisture content is gonna be off. Also your casing needs pasteurized, not sterilized. Let it sit out overnight to catch some contams (outside would be awesome) then adjust moisture and pasteurize.

But yes, you NEED the foil.

i put verm at the bottom because the tek i followed said it would help if there's too much moisture. and i didnt know you had to pasturize casing, but i'll do some reading up on it and try it tomorrow.

Protip: if your TEK says to do ________ to make up for ______ then it's not a good TEK.

I saw that tek myself on youtube when researching. guy talked about adding verm to your wbs like it was some magical secret. perfect moisture content, EVERYTIME!!!
