The 4 to the left are still stained yellow and the surface is kind of hard and shiney. It's been close to 2 weeks and I only have a couple pins.

I also took them out of the trays and found a couple pins on the sides after I peeled the plastic off

Ya I just took them out...I'm just afraid it isn't going to pin on the top because of the yellow shiney surface...and when I took them out I found pins on the sides.

I'm kind of thinking it might be my tap water that is causing this because I have a high iron and sulfur content in my water so I switched to bottle water.

I've been kind of second guessing the whole don't use distilled water thing. I know distilled water leeches nutrients out of the substrate but then the fruits use that water to grow. So wouldn't distilled water just make it easier for the mycelium to digest its food. I may be way off. Its just something I was thinking about.

There's really no reason to use distilled at all. Save that for a hydro grow or something. Mushrooms can utilize those trace minerals, and if you're trying to think about the distilled water being more easily able to leech nutrients from the substrate to be more easily digested you're already way overthinking it. (besides that they like to digest solids more than liquids, or at least it would certainly be better for fruiting if that was a factor)

I know there's no real reason to use it I just think it my not be harmful. I misted my first couple grows with distilled water and got some of my best results.

Oh, well, for misting, I guess, sure. I can't see it hurting there really. But for the initial hydration of your spawn and bulk subs, no reason to use distilled at all. I'd find it silly to get distilled water and then mix a bunch of gypsum into it, watching it turn into cloudy mud.

Impossible to say. Most likely, yes. It would be unusual to only get 5 pins total. Even from a single PF cake.
