Premature pins/fruits in mono(s)

So I spawned some grain to verm/coir on 25/06 (06/26 in US date order). I usually let my tubs colonise and consolidate for 2 weeks, by which point they should be fully white and I then initiate pinning.
It has been almost 2 weeks and there is still visible substrate on top, though fluffy myc covering almost the entire surface, it just hasn't colonised everything yet.
I am getting quite a few pins as well as several large fruits already, just had my first peek to see how things were progressing.
Not sure whether I should just put them into fruiting conditions (they are in tied up trash bags at the moment) or pick the premature fruits and wait a few days..
I have scoured quite a few mono grow logs and many look like mine (though they may have cased...) and are in fruiting conditions, I just usually expect full consolidation of substrate before I let them go, I never case things anymore so I like to see pure white before letting them go for it.
Have I just been waiting undue extra time previously, or should I wait a few more days?
Chances of contam from exposed substrate look very slim, but would always rather be safe than sorry.
1st tubs in a couple of years and just a bit hesitant of making school boy errors..
What do y'all reckon? I could add pics, but don't really want the tubs fully opened and increasing the premature pinning (if that is indeed the case)..

That's what I was thinking, several fruits are already 3-5" tall, caps still fully closed so hoping I'm going to get some large fruits. My spawn ratio was fairly high too, no more than 1:2 spawn-sub, I'm thinking perhaps they are just happy and raring to go. My polyfill holes are larger than I have used before, so maybe FAE is too high even with sealed trash bags around the tubs?
By the way they are only in bags to keep FAE down during colonisation/consolidation, they are thin enough to allow a small amount of light in.
Doing 1 tub of Allen and another of Burma, starting some Oak Ridge in next day or two (jars fully consolidated).
Going to leave them until tomorrow morning I think, then just fruit and hope for the best. My grow room is very rarely used for anything so should be clean and relatively contam free, going to place a small fan on 12/12 in the corner of the room, giving indirect airflow.
Will post pics if they are a success, or a complete fucking failure as a learning tool for others.
I used to knock out tubs/trays/Marthas/SGFCs etc all the time, amazing how a couple of years off makes you doubt yourself.
